The Freshest Olive Oil in Napa Valley

Straight off the presses! Experience the difference fresh makes, an Italian culinary tradition that is hundreds of years old. Olio Nuovo (meaning “new oil”) differs from typical olive oil. Taken straight from the press, this freshly pressed oil retains all its natural flavors. Cold-pressed under 50 degrees and harvested locally from the Castello’s estate vineyard, it offers a robust taste rich in polyphenols—olive oil in its most intense, raw state.

Made exclusively from olives harvested at Morning Dew Ranch in Anderson Valley, Mendocino County, these olives grow alongside some of the Castello’s prized Pinot Noir vines. Harvested by hand on a foggy morning by the same dedicated team that tends the vineyards, the result is a truly special product.

Olio Nuovo is best enjoyed as a finishing or dipping oil—perfect drizzled over salads, pasta, meats, or simply served with bread and salt. It is available seasonally for a limited time.
